Profumo Di Firenze Tutto Caramello! By Olya Bar
There’s a great deal that comes out of Italy worth celebrating, and perfumery belongs firmly on that list. Yet so many of the country’s houses stay just under the radar, the kind of discovery reserved for those willing to go looking rather than wait to be found. Profumo di Firenze is exactly that sort of find: a small house that released its first fragrance in 2016 and has been quietly building something beautiful ever since. Their latest Extrait collection brings two launches that couldn’t be more different from one another. Tutto Caramello! is the decadent, sugar-drenched confection we’ll review today, peeling back its frosted layers one by one. Plumbello, by contrast, is moody and dreamlike, built around woods, melancholic violets, and sprawling juniper berries.

A quick word on the house itself, because it isn’t what you might assume. This isn’t some ancient perfumery house with ties to the royal court; it’s something more contemporary: a modern love letter to Florence. Profumo di Firenze is the olfactory project of the Galardi family, devoted entirely to a city whose relationship with perfumery runs deep and old.

That connection traces back to the Renaissance customs of Florentine nobility, and famously, to Caterina de’ Medici, who carried her love of scent with her into the French court. Today, walking through Florence’s old town, past frescoed vaults, quiet relics, the countryside just beyond its edges, that same sensory history still lingers in the air. Profumo di Firenze doesn’t try to recreate the past so much as bottle what the city actually smells like now, in its most ordinary, daily moments.

Profumo Di Firenze Tutto Caramello! Via the brand
Tutto Caramello! is an extrait de parfum from the house’s Extrait Collection, and it is gourmand through and through. The composition centers on a rich accord of salted caramel, glazed vanilla, and powdered sugar, softened at the edges by jasmine and white flowers, and grounded with light woods and amber. It opens on the most convincing croissant-and-icing-sugar accord imaginable, moves into a soft floral heart, and settles into a warm, sweet base, though “settles” might be generous, because this fragrance never really lets go of its gourmand origins. Not once, start to finish. This is caramel melted over a waffle cone. Caramel drizzled thick over vanilla gelato. Caramel you can practically chew, the kind that makes you wonder, halfway through, whether your teeth are going to survive the experience. It is, without apology, an ode to the sweetest, most indulgent dessert imaginable, and Italy, as anyone who’s been will tell you, has no shortage of those to draw from.
Notes: Croissant, Icing Sugar, Jasmine, White Flowers, Salted Caramel, Glazed Vanilla, Light Woods, Amber.
